Origins of Calabrian cuisine

Calabrian cuisine is very much connected to religious and spiritual life, as well as to festivities dating back to ancient times, throughout 3.000 years of history, from Magna Graecia to our times.
During Christmas, Epiphany, Easter, Religious festivals of every town, carnival etc.. cooked meals are always the same, year after year, depending much on the festival being celebrated.

 

Throughout the years Greeks, Romans, Arabs and Spaniards have all passed on their own dishes which Calabrians, in later years, have not been modified much, and just like chillies, they are still at the heart of the gastronomic culture par excellence.  
In the Calabrian Cuisine the most important dishes are those which follow traditions.
