Wild Fennel is a herbaceous plant which has Mediterranean origins, in Italy it can be found mainly in coastal areas. Romans often used dried fennel seeds in terracotta amphoras and later used to preserve food.
Throughout the Middle Ages, it was used for digestion and elimination of gastric gas.
Gastronomic Use: old seeds are used to preserve meats but also to flavour fish dishes, sauces and salads.
Therapeutic properties: depurative, tonic-appetizer, carminative, antispasmodic.
